Not your typical Banana Nut Bread

I love anything that incorporates bananas. I’m not a firm believer that humans evolved from apes or any of that jazz, BUT I do have a strange obsession with the yellow fruit which has me wondering if I might have been a monkey in another life?! No joke.
One of my favorite banana recipes is banana nut bread but the ingredients in the Wiese Family’s version are not exactly friendly for those who are health conscious. So, I renovated it of course!!
Say “Hello” to my Banana Nut Bread—made into cute, snack size bites for a quick grab and go treat or breakfast.

Banana Nut Bread—Bites
Makes 12 small balls
Time: ~22 minutes

Ingredients
• 2 cups old fashioned oats, ground into flour
• ½ cup chopped nuts, I used pecans
• 1 banana, mashed
• 1 ½ tsp pure vanilla extract
• 1/8 –1/4 cup honey
• ½ tsp baking soda
• 4oz applesauce
• ¼ tsp cinnamon

Method
1. Preheat oven 375°F and prep baking sheet
2. Combine dry ingredients together first and then add the remaining items.
3. Mix well and form into small balls. Place on baking sheet and bake for ~22 minutes or until golden. Keep an eye on them as every oven cooks differently!

Can’t you see that it’s just raining? There ain’t no need to go outside.

We are getting some April showers here in Nacogdoches on this beautiful Sunday, and I had a little inspiration from Jack Johnson this morning thanks to Pandora. After sleeping in a bit, I woke up, began my usual morning jam-session, and made some Banana Pancakes. These are super easy to mix up and are some of my absolute favorites. Top them off with a little honey, grab a glass of milk, and enjoy!! Did I mention they are vegan friendly 🙂

Banana Pancakes

  • Servings: 6 pancakes

Ingredients

  • 2/3 c. old fashioned oatmeal
  • ¼ c. 100% whole wheat flour
  • 1tsp. baking powder
  • ¼ tsp. sea salt
  • ½ tsp. cinnamon
  • ¾ c. milk—I used Almond Milk
  • ¼ tsp. pure vanilla extract
  • 1 ripe banana

Method

  1. Blend together oats, flour, baking powder, salt, and cinnamon until it makes a nice powder.
  2. Add in milk, vanilla extract, and banana—Blend until smooth
  3. Heat a small skillet or griddle (lightly oiled with olive oil)—Low to Medium heat
  4. Pour batter and cook. Once the pancake bubbles on one side, it’s time to flip it to the other! This makes six, medium-sized, pancakes (or 8-10 mini ones). Drizzle with honey and serve!!
